What did you have for dinner? -Part dois

hubby is sick, so homemade chicken noodle soup and buttermilk biscuits.

Now that sounds good. When I make chicken soup, I usually let my maripoix simmer for a while, and then add golden, sweet corn kernels to it. My take on chicken soup simply adds corn, cracked ppper, and a pinch of sea salt.

Buttermilk biscuits sound good. I usually make normal, flour biscuits and add small chunks of sharp cheddar and chopped, white onion into the mix. Gives a very nice, baked onion and melted cheese taste. I should add some rosemary to it, as well.

kali, in fact ı use home made turkısh noodle or chinese one which ı buy from markets.ı boil some water and then add noodles and chicken pieces and the other ingredients.ı grill or saute the chicken pieces before adding to boiled noodles.

Siberian Pelmeni Recipe

The Dough

1 1/2 cups flour
2 eggs
1/2 cup water or milk
1/2 tsp. of salt

Mix the flour, eggs, water or milk and the salt. Let the dough rest meanwhile you do the filling. Follow the instructions in the video on how to form the dough.

The Filling

500 g. ground beef or Pork (about 1lb.)
1 – 2 medium onions, chopped
1 tsp. salt
1/2 tsp. black pepper

Mix the ground beef, onions, salt and pepper together. Additionaly, if you want, you can mix ground beef with ground pork and add garlic to taste.

Boil the pelmeni in salted water for about 15 minutes

spinach salad with applewood smoked bacon, walnuts I caramelized in brown sugar, dried cranberries, feta cheese, and my homemade balsamic vinaigrette dressing (basically ~1.5 cups of EV olive oil, 2/3 cup of balsamic vinegar, 1 tbs Dijon mustard, 1 tbs brown sugar, 3 cloves of garlic minced and several cranks of a pepper mill)

dessert mirrored the cranberry theme, I had fresh cranberries in the fridge, and I also spotted some crescent rolls and the baked brie sitting there, so I baked the crescent rolls and the brie together in the oven, pulled them out hot and smothered the rolls with the brie, and topped with a cranberry sauce of sorts. I boiled the bag of fresh cranberries with a cup of sugar, about 1/2 cup of water, a cinnamon stick and a large chunk of slivered fresh ginger. yummy! I think I will be doing this again over the holidays.

I see you like a strong vinaigrette. So do I. This way, I don't have to saturate the salad with the dressing. I also recently started adding brown sugar (sometimes) to my dressing.

Tonight, I'll be eschewing any kind of financial responsibility, giving in to my lazy side, and ordering middle eastern. I'm leaning towards the mixed grill - chicken, beef, lamb, and shrimp kabobs with grilled vegetables and a side of rice. Maybe a little lentil soup to round things out.

We had strip steaks med-rare, a cold orzo salad with garbonzo beans, tomatoes, green olives, scallions, feta cheese and a balsamic/oil dressing, plus a small cup of home-made minestrone soup. Yum!
 
I made venison chili from a fresh kill. I like to serve it over rice and top it with chopped sweet onion and shredded cheese and a pickled jalepeno. I have perfected my chili recipe for over 30 years. I call it MoFo Gringo Chili. hmmmmmm so gooood.

I made sweet and sour chickpeas with saffron pilau rice. One of my favourite meals and I'm not even a veggie!
 
Had Popeye's spicy chicken last night with some Cajun rice and red beans and rice.
 
I spread a layer of rice on a baking sheet, put pork chops on top of that, and then made a sauce by throwing 3 granny smith apples and a large onion in the food processor, and then cooked that for a bit in a skillet with curry powder, a huge scoop of mango chutney, some chicken stock and some heavy cream. I then poured that all over the pork chops and rice and baked in the over for an hour.
 
Todays Menu at SgtRocks house. Fresh Norwegian Mackerel split and grilled with olive oil and sea salt. I buy it from my local Saigon Market. I will serve this with black beans and rice and fresh oi kimchi my wife made. I love kimchi, especially oi (cucumber) kimchi.

Now THAT sounds good. :)

Last night I ate leftovers. Bean soup. Not just any bean soup, but homemade bean soup from scratch with a whole ham bone w/meat, simmering inside the pot. Afterthoroughly cooking the soup, we took out the bone and it was stripped clean. All the flavor was in the soup, thus giving a very rich and delicious meal. Just add one line of mustard, bring a cup of cold milk, and you're good to go.
