If Pence tries to invoke the 25th Amendment, Trump can just object, and it goes to Congress. As long as Congress is involved, from a practical perspective, you might as well impeach him.
Removal via impeachment also prevents Trump from holding office again.

From what I read this morning that isn’t the case. Pence would remain President until after the the Congress boted on the matter - if it got that far. Since Congress has 21 days to vote in it Pelosi and McConnell could just not take it up and Pence finishes Trump’s term.
So the 25A is a viable option but I’m still not 100% convinced it’d be a good idea.

This would be an easier avenue than envoking the 25th amendment or impeachment.

One way around that is to make sure the majority consists of confirmed cabinet people.There are some good questions about whether this is even a possibility right now. Most of what would ordinarily be considered the Cabinet are people serving in an acting capacity. It’s not clear if acting secretaries have 25th Amendment authority as a Cabinet under the Constitution.
