What did you have for dinner?

Mine is grouse, probably much like a partridge. I like doves too. I don't really like pheasant, duck or geese much.
It was the start of the grouse season here on the 12th of August, its known as the glorious 12th.

It appears to have started very well with the grouse making a resurgence after 7 bad years.

The grouse shooting season is worth apparently £30 million to the Scottish economy.

I think all game birds when young are good eating if they have been hung correctly, and simply roasted in a red hot oven very quickly, so they are pink.

Old birds should be braised slowly for a long time.
 
Actually, rainbows were introduced into dozens of countries and have become an ecological problem in those countries as well. It's not about white man fish, it's about the introduction of species into environments where they have no natural predators. Very much like the pheasants I try to run over every day out here. They've taken over the grouse habitat and I do my part by killing off as many of them as I can! Both rainbows and pheasants. *flex*

It's not just animals either. Some plants that get introduced cause similar problems. In Alaska, we have had a near ecological disaster with the introduction of the japanese spruce, which brought with it a kind of beetle that has wrought havoc on the other hardwoods. Our fires have gotten out of control in the summer because of standing deadwood forests where that beetle has killed every tree in a matter of a couple of years.

I love dove. Haven't had it in a while but it is probably my favorite poultry. Only thing I don't like about it is spending the entire day hunting enough of them to make one meal. It's just a pain because I have this phobia about meat sitting out too long so I am constantly running back to the truck to drop the breasts in the cooler. LOL

I like the breasts breaded in panko, lightly fried and then topped with sherry cream sauce I make. Serve 'em over a bed of wild mushroom risotto and some spaghetti squash on the side.

Otherwise, I just roast them and have them with cornbread stuffing and winter peas.

That sounds so good to me right now. I think that will probably be dinner a couple of times next week when josh goes back to NYC.

LOL I did that for myself last night since my girlfriend is in your neck of the woods, LA.
 
What's she doing here? It's gotta be for work because no one would just come here for fun...:lol:

Her dad grew up in Long Beach and when not traveling (he is a retired airline pilot) lives there also her sister lives there in Newport Beach.

I used to carry a pair of scissors when I hunted dove. To clean them, I just pulled out the scissors, cut off the head and wings, then stuck my finger up the bird's ass, and then pulled and ripped the bird apart. From there, it was easy to get the 2 little pieces of breast meat out. I grossed out my wife when I showed her how I cleaned the birds. She refused to eat them. LOL.

That's the easiest way to clean them. We use slingshots to kill them. It's not very fair to use anything else and end up with a pile of feathers to chew on.

Tonight is my best friend's last night in town before returning to Alaska. I made a variation of oyster's rockefeller and replaced the hollandaise with a Ponzu and shallot sauce and a lobster bisque with banana and lemongrass instead of tomato base. We had a "surf and turf" of seared ahi with ginger and lemon soy with slices of fillet mignon with wasabi teryaki butter demiglaze, wasabi mashed potatoe and stir fried bok choy.
 
Alright, no pics but...

I stuffed boneless skinless air chilled chicken breasts with Parmesean, romano, and asiago cheeses, minced garlic and fresh basil, Grilled them over medium, basting them with butter, fresh squeezed lemon juice and some lemon zest....


This real simple recipe was very very tasty... The Fresh Basil made it.....


The only difference would be I would instead of slicing and butterflying the breast, I would pound em and roll em....


I served it with some simple texmati brown rice (never instant), and mixed greens...
 
You know Hellhound, if I hadn't read the caption I would have thought you managed to cut your baby boy into four thighs.
 
Rev. your baby boy is so cute. Good luck in that BBQ contest. I think you will do well cause that looks yummy.

Tonight I actually made dinner (kinda). It was salad bar night so not a lot involved other than slicing and dicing and putting things into their own bowls.

Red Pepper
Tomato
Hard boiled eggs
Turkey
Cheddar cheese
Blue Cheese Crumbles
Cucumber
Red Onion
Sunflower Seeds
Dried Cranberries

Tomorrow I'll throw in some red beans, garbanzos, corn and whatever else sounds good.
 
Went up to a mexican restaurant (called, I **** you not, Restaurante Mexicano :slapme:). Had some enchiladas and 48 oz of margarita
 
Arbys Beef&Cheddar, Fries and Jamocha Shake.
 
It is so hot here the kids and I had Popsicles for dinner. Too hot to cook, too hot to eat. We swam at the lake and it's all anyone wanted.
 
Leftover chinese food from lunch. Lemon chicken, half an egg roll, and some stir fried baby bok choy.

Josh left for New York again so I am bacheloring it until Friday.
