No, the farmers are not going to cut off access to to food to their biggest buyers, since guess what? They're the only buyers the farmers have.

The transportation is in the cities. The food reserves are in the cities, as are the finances. The livelihoods of farmers are interwoven into the financial interests of the cities they rely on for subsidies, investment, and you know, demand. And of course the tools, the organizational framework, the infrastructure.

It's only because of all that *URBAN* financial capital and material resources that modern farmers operate at above medieval peasants. Only in your fantasies do rural farmers have the ability to operate without the assistance from urban populations.
