What did you have for dinner? -Part dois

Beefy French Onion Potpie. My wife made it from an old magazine cutout recipe, but it's this :


It was excellent. We'll make it again. I ended up chopping the onion, because it was hurting her eyes. Sometimes chopping onions affects me, and other times it doesn't. This time, it didn't. Either way, we both enjoyed the dish a lot.

That looks easy enough and just right for a cold day.
You tear more in a humid environment.
 
Taco Bell!!!

I was drove my daughter back to Wellington and could not resist getting Taco Bell, 8 burritos to freeze for later except the one I am chowing!

Only one in Wellington...
 
On the menu tonight....streamed mussels and shrimp in a garlic and Old Bay butter sauce....touch of Tabasco. Lots of baguette to sop it up.
 
My wife picked up BBQ.

1/2 brisket sandwich
BBQ taco
Corn casserole
Mac and cheese.

I'm not a big BBQ person, but it was pretty good. We worked up an appetite while cleaning today.
 
"Lazy red and green enchiladas." It's a "cheat recipe."

You use frozen taquitos, steak, chicken, etc. These were chicken and cheese. Lay 'em all out in a 13x9 casserole dish, cover with canned red and green enchilada sauce, cover with cheese and bake. I didnt have everything so I just used red enchilada sauce, added canned hot Hatch green chilis, some chopped onion instead of green onions, and Rotel instead of chopped tomatoes. Then covered all that with shredded Mexican cheese from a bag and baked til bubbly. Terrible for you but very yummy!
 
It was my night to pick up the kiddos, so I budgeted calories in case I could manipulate the situation into getting a burger. Right after picking up older kiddo, I said, "Ok, guys, what should we do for dinner?" The response was predictably awesome. I got a cheeseburger and nuggets, they got their meals, and a good time was had by all.
 
Tonight, at vesper's diner, the blue plate special was baked chicken breasts, buttered parsley potatoes and steamed broccoli.
The chicken breasts were brined in salt water for a couple of hours. They were then rinsed and patted dry then brushed with melted butter on both sides. They were then sprinkled with a seasoning on both sides then baked for 22 minutes in a high 450 degree oven. My seasoning; garlic powder, onion powder, black pepper, paprika, and salt. Juicy and delicious.

The only potatoes on hand were Idaho. And fresh parsley is always best. I had dry but hydrated it in the melted butter before adding the potatoes that cooked in salted water. They were tasty.

The broccoli was frozen. I put it in the microwave for a couple of minutes then finished it off in a skillet with a little butter and parmesan cheese.

It was a tasty meal.
 
Chinese take-out, chicken and broccoli, vegetable Lo Mein, sweet and sour chicken, shrimp fried rice, shrimp with snow peas , egg drop, egg rolls. I ain't cooking for the next few days.
