What did you have for dinner? -Part dois

Orange roughy with a white wine/butter/herb/garlic/lemon sauce with snow peas, scallions and mushrooms. Dash of dill and parsley on top of finished plate.

Had a nearly identical dinner last nite except it was sole with sugar snap peas and couscous

I have been on a snap pea kick the last couple of weeks, I just eat them straight out of the bag

Last night I made arepas with ham and queso fresco with ripe plantains broiled with butter and a sprinkle of brown sugar.
 
Steak--3 hour marinade of Wors....however you spell it! and Italian Dressing. Grilled. Just amazing. I missed the grill.
 
my buddy's wedding was catered by Fazoli's, so i had that. thought that it was a fun idea.
 
Grilled thick pork chops---marinade was a honey mustard marinade with some shock top crisp apple wheat cider mixed. My 91 year old grandmother said they were the best chops she had eaten in her entire life!

That will put a smile on your face :)

Grilled zucchini and some mushroom stuffing too!
 
leftovers from Mom's Mother's Day dinner. my favorite parts were the macaroni salad and blackberry pie.
 
took the GF's family out for a slip meal : half of a burger, some fried cheese balls, and french fries. doing some home renovations (stripped the spare bedroom down to hardwood) and walking to burn part of it off, and i skipped lunch.

Had a BLT with an egg on it last night. Yummy.
 
I was invited to a friend's house for a get together: I was served lamb chops, string beans, corn, fried mushrooms and lasagne with some red wine (I brought two bottles over) and mango cheesecake for dessert. That was pretty damn good. :mrgreen:
 
So HEB had those "burger stuffing" things. You know, what I am talking about.


But, it was "buy a pound of beef, get free" so I said what the hell, and picked one up. Then we made burgers. I hickory smoked them. I seasoned the meat with 1 pack of seasoning mixed into 2 lbs of meat.

Then we filled the burgers with either gouda (sliced fine) or colby jack shredded, finely diced onion, mushroom, a dash of garlic and then I cooked em on the grill. We ate them on a toasted pretzel bun, with baked steak fries. Only cause I was lazy and didn't fry them.

The first one was.. TOO DAMN BIG, but the rest came out perfect. Here's a look at the monster:

Now here it is cut open, yes it wasn't as done as I wanted it, but no I'm not worried.

That burger looks fantastic. Not a fan of pretzel buns, though. I know they're all trendy lately, but they just don't do it for me.

I agree on Pretzel buns, but this... this worked amazingly.

INGREDIENTS
Table salt
1pound spaghetti
1/4cup extra virgin olive oil, plus more for serving
1medium shallot, minced (about 3 tablespoons)
1/4cup heavy cream
2teaspoons finely grated zest and 1/4 cup juice from 3 lemons
1ounce finely grated Parmesan cheese (about 1/2 cup), plus more for serving
Ground black pepper
2tablespoons shredded fresh basil leaves

Preparation

INSTRUCTIONS 1. Bring 4 quarts water to boil in large Dutch oven over high heat. Add 1 tablespoon salt and pasta to boiling water; cook, stirring frequently, until al dente. Reserve 1¾ cups cooking water, drain pasta into colander, and set aside. 2. Heat 1 tablespoon oil in now-empty Dutch oven over medium heat until shimmering. Add shallot and 1/2 teaspoon salt; cook until shallot is softened, about 2 minutes. Whisk 1 1/2 cups of reserved pasta cooking water and cream into pot; bring to simmer and cook for 2 minutes. Remove pot from heat, return pasta, and stir until coated. Stir in remaining 3 tablespoons oil, lemon zest, lemon juice, cheese, and 1/2 teaspoon pepper. 3. Cover and let pasta stand 2 minutes, tossing frequently and adjusting consistency with remaining 1/4 cup reserved pasta water if necessary. Stir in basil and season with salt and pepper to taste. Serve, drizzling individual portions with oil and sprinkling with cheese. Let the dish rest briefly before serving so the flavors develop and the sauce thickens.
 
my GF and i had chicken Alfredo spaghetti night. i helped cook, and made a garlic butter dipping sauce for the bread. she dressed up the Alfredo, and it was restaurant good.

So Winco had 7% fat ground beef for less than 27% fat (a lot less, on sale I get but this is crazy), so my mamma not raising no dummy I got a 10lb chub of 7%. But the plan was burgers so I also got 12oz of cheap bacon (it is rarely sold as a pound anymore....****ERS!......and minced half of if and incorporated it ( I am a chef, a very good one, I know the lingo) into the GB. On top of the burgers was Tillamook 18 month old on some and a wonderful blue (new to me) called Valdeon (From some little podunk region of Spain) on others. I had made a potato salad with fresh garlic and Mex blend cheese, which had Inglehoffers Stone Ground which I just ADORE. Also Bushes Country Style with added bacon (cause you can never have TOO MUCH BACON) and sweet onions which are in season and grown right here in WA but I forget the brand of these....NOT Walla Walla though.

Cooked it outside in my outdoor kitchen, with a few cocktails with Maple Syrup as a main ingredient, a new kick for me.

THe wife loves em.

We had broccoli and spaghetti tonight. Six garlic cloves minced and lightly browned in about a quarter cup of olive oil. Fettuccini cooked in the microwave in a pasta cooker. Pasta added to pan with a bit of pasta water and lots of Parmesan cheese. And garlic cheese bread made with a French baguette. Yummy!
 
I'm drinking my dinner tonight.
 
tried out the Mexican restaurant in our neighborhood. split a burrito and chips / salsa. pretty good.
 
Damn this was good....Prefab Italian Potato Gnocchi and a Vodka sauce made with Campbell's tomato soup, cream cheese, evap milk, real sourcream (watch it, get one of the fake ones too hot and it will break), chicken base, Kirkland pesto, Military Special vodka, sweet onion, fresh garlic, decent butter...topped with fine shreds of the perfect hard cheese...forget what this is but it is expensive.
