No, they didn't choose because it's not a choice, despite the attempt by many people to suppress it. Your god also created psychological gender identity which is not a binary of black and white. Your god also created intersex people.

All theology is made up until you can objectively prove that any god exists. Theology is the ultimate example of creative writing.

He also gave them the choice to be what they psychologically identify as but not the choice to be what they want at birth.

No, it is not a choice, any more than it was a choice for me, or (I assume) to be heterosexual. I knew I liked boys (4-5th grade) before I heard about sexual orientation or being gay/lesbian. If gender identity was a choice then there would be no such thing as gender dysphoria.

You're born physically one way but don't identify with it, sounds like disorientation. Which becomes physically/mentally a problem for that person.
