What did you have for dinner? -Part dois

So, first time making potato leek soup.

Recipe calls for yukon golds, leeks, garlic, onion, and fresh thyme. Veg stock. And sherry vinegar...love love! Requires no cream but you can add if you like...I didnt. Blend with immersion blender.

So it was nice but seems to be missing something. Some kind of "tang." Now I can add more sherry vinegar but I think it might be more of one or more of the aromatics. More leeks? Before I go google other recipes...any ideas from you folks?

I may also add prosciutto or bacon another time too, but that's not what's missing now. I'm expecting smooth but a tang on the tongue. Hard to describe, just what I've had prepared for me in the past.

Ideas?

I saw that! In searching, in her recipe. Mine calls for sherry vinegar as an acid....and I love it. I am going to try a yellow onion instead of a white onion next time, since they are stronger. And add a bay leaf.

I can try stirring in a little lemon juice after cooking. I added some Tabasco to my leftovers, just a little, and it worked well. Tabasco is also vinegar-based.

Spent the day teaching one of the guys restoring my house how to strip wallpaper in the master bath and powder room. He is an apprentice and a good kid. I want to get back in my house! My husband got an 8-piece meal, extra crispy from KFC, mashed potatoes, slaw and I nuked some green beans.

It's an online recipe that I picked because it had the sherry vinegar instead of white wine or cream. (Altho you can add cream). But I was also trying to make it the way I've had it when I've ordered it in the past...and really liked. So that was my goal.

But I enjoy the journey! Bought the stuff for another batch today. 😄

Thinly sliced roast beef and a couple of slices of good Swiss on a great, crusty, ciabatta roll with mayo, horse radish, onion, romain lettuce and tomato.

Going to snarf a nice cannoli cream filled lobster claw a bit later for a late night snack.

I shouldn’t oughtta do it, but I’m gonna. :cool:
 
I made keto chili, but its been a long time since I made chili in general and I put in too much chili powder. It was too spicy for my son and I had to get him a burger and fries (grrr). In addition to the bowl, I also had cabbage wedges and kale salad.

By doing my own research, I think I figured out my issue, which is insulin resistance. It seems all the fresh fruits Id been eating daily for years (I was taught that fruits were good for you) would actually spike my blood sugar levels. Since stopping them and going keto, I feel a whole lot better sleepwise. This is the kind of stuff doctors dont normally tell you, so it pays to look things up on your own. Of course, YMMV.
 
My wife and I have been pleasantly surprised by the Rana brand of Italian meals and sauces lately. In many cases we find their prepared meals to be superior to what we can get from italian restaurants in our area. This might say more for our selection of restaurants, but I have honestly enjoyed everything I have had from them.

My favorites:

Pesto - best pre-packaed pesto I'm ever had.

Butternut Squash Ravioli in Alfredo - Very good. In a dish where the sweetness of the ravioli or the cheesiness of the Alfredo could overpower, they are well balanced.

Braised beef Lasagna - A good lasagna with a nice tender braised beef.

I have a similar problem.

It’s been complicated by other issues.

I find a 30 day protein/veggie sprint helps the cells insulin resistance reset and I can lower my insulin injection doses by nearly half afterward to get the same results.

I cut the sugars out completely and the carbs down to next to nothing. Just what’s required for health (one does need some carbs). I try to keep any fats good fats.

It’s not the easiest thing but it is doable and, like I said, has an actual impact on insulin resistance levels.
 
Do it.Do you have an air fryer? If so, try this if you dare :)
Cut firm, well drained tofu into small cubes. Marinate it in a mixture of soy sauce, lime juice, sriracha (to taste), minced ginger and garlic.
Air fry at 390 for 10-15 mins, or until crisp. Goes great with Asian style salads and such.

No, thank goodness. We had a lot of rain an flash floods Our home can be fixed unlike many in the throes of Helene and Milton, et al. The water line to the toilet tank burst and flooded the master bath and bedroom and most of the downstairs in late July. We've been in a restoration zone since August, and it's gotten so old. Hoping to be back in the house by December. Thankfully, we're living in the garage apartment, and Pop is at his companion's home.

Had leftover KFC and Edward's pecan pie.

I'm glad you liked it. Next time your taste buds are up for another adventure, try this marinade. You can take tofu in many directions.
Marinade:

1/2 cup mint leaves

1/2 cup fresh orange juice

1/3 cup oregano leaves

1/4 cup olive oil

8 cloves peeled garlic

2 limes, juiced

4 teaspoons kosher salt

1 tablespoon ground cumin

2 teaspoons smoked paprika

1 teaspoon freshly ground black pepper

1 teaspoon dried oregano

1/4 teaspoon cayenne pepper

Yes, I go all in with the garlic but that's not to everyone's liking. I do brush it off after marinating so not to scorch it and risk it becoming bitter.

I made a chicken pasta bag meal and my own DIY garlic bread using what I had.

English Muffins cut in half
Melted butter
Garlic powder with Italian seasoning
Mexican cheese
Bake 6-7 minutes at 375 F.

The DIY garlic bread turned out pretty well.

Are you only doing this low carb diet temporarily? Im only a week into keto now and I slept like a baby for the first time in years, no waking up to go to the bathroom anymore. Looks like Im going to do keto for the rest of my life.

I could, and probably should, but while I don’t have many vices these days eating what I enjoy on occasion is a trade off I haven’t shaken. I like pasta, bread, the occasional cookie or the occasional pastry. Ice cream is my kryptonite.

There are some keto drawbacks for me. I notice my demeanor changes. I can get a bit surly. My body chemistry changes as well. Literally the way I smell changes. I can get a bit rank (breath, sweat). Nothing unmanageable with a bit of heightened self-awareness and maintenance. Just an extra something to deal with.
