What did you have for dinner? -Part dois

Wide egg noodles with salt and butter.

One inch thick 'Wagyu' Ribeye, marinated in soy and black pepper, Nathan's steak fries with melted butter and fire-roasted corn medley.

Grip, I love boneless ribeyes and I've been wanting to try a good Wagyu steak for a long time. I only bought Wagyu hot dogs at a meat market and they were a big disappointment, just bloated fatty hot dogs.....want the real deal.

Did you cook it yourself, where did you buy the Wagyu if I may ask?

Amy's dairy free vegetarian pot pie. i don't have a problem with dairy, but i've been saving that one back in the freezer. it was good.

Ribeye is my fav and this particular cut was about the best I ever ate, cooked it myself. Actually, it was about a 2" thick piece of .81 lbs of marbelized beef. It was what I imagine a good Wagyu should taste like, but it wasn't actually labeled as such. I did have some Kobe once, charbroiled, at a 4 Star Restaurant in Vero Bch, FL called The Tides and as delicious as it was, the Ribeye I had the other day was better. If you're ever in that area, you've got to try this restaurant, it's Michelin level quality from the owner Chef Leanne Kelleher. It's a little, old, converted beach house, with mostly alfresco dining and cool beach breezes accenting the food.

She's an artist and perfectionist with each dish.

Meatloaf tonight. I'm gonna change a few things out though, perhaps part lentils part rice. Black beans? A few extra spices.
Best Vegetarian Meatloaf – A Couple Cooks

Doesn't it look good?

Wide egg noodles with salt and butter.

For me a bowl of butter noodles hits the spot. Sometimes just fixing any pasta, a little butter or olive oil, garlic and parsley is perfect.

Bacon (nitrate-free) sandwiches with grape tomatoes, onions, mayo on Kaiser rolls.

Tonight I made breakfast for supper. Cheese omelets and turkey bacon. Blah. But it was filling and I am thankful for the food.

Good news is hubby fixed the grill. We got almost 2 years ago online. It's a Charbroil and is all stainless steel. That's why I picked it out because over the years parts on a grill that are not stainless steal tend to fall apart, rust. But the dang thing would not heat up properly. You could not get the thing to heat up to 350 after waiting 20 minutes. He tried to fix it last year and became frustrated and gave up. He called the hotline and would wait a long time and no one would answer his call. Tonight after he played around with it, it heated up to 500 degrees in less than 5 minutes. WoooooHoooooo! Tomorrow I will be grilling ONE steak for dinner because one steak feeds both of us. I take 1/3 and he eats 2/3 and we are both satisfied. I love cooking on the grill. Over the years I have perfected some awesome recipes that can not be duplicated on a regular stove so I am excited.

Stepped up tuna melts. Started with thick slices of rye and cornmeal bread. Earlier I had set two large tuna steaks, about 2lbs in a marinade of yogurt, parsley, mint and basil. Baked the tuna for 12 minutes at 400 degrees. Hit each slice of bread with a mustard, avocado and yogurt spread, a thin slice of yellow onion, a slice of hot house tomato, covered with small pieces of the tuna tossed in the marinade with more plain yogurt and mint, topped with double cream gouda, and baked on cookie sheets at 350 degrees until the cheese melted. Served with plain steamed asparagus, a simple cucumber and onion salad dressed with white wine vinegar and walnut oil, an assortment of olives and pepperocini (brined hot small Italian green peppers), and chilled steamed mushrooms. Iced lemonade. Fresh sliced assorted fruit, berries and red grapes for dessert.

Brisket and pork belly burnt ends. I should have taken a pic after the brown sugar glazed in.

This was Sunday dinner...we had friends in from AZ. Topped off with some baked potatoes and a tomato and avocado salad.

BBQ pork ribs, mashed potatoes with gravy, marinated mushrooms....curbside from Texas Roadhouse. Ordered some pulled pork also, but didn't get to it. Will have a couple of days of leftovers.

Vegetarian black bean stew, whole wheat loaf with French butter.

Tonight I roasted a chicken and made a dish of celery/onion dressing. Those Pepperidge herb seasoned croutons have been in the pantry for awhile like last Thanksgiving. Fixed gravy, green beans and canned cranberries that have been around for awhile too. It was actually really good and there is plenty for tomorrow. No dessert, no snack cakes, ice cream, cookies or fresh fruit. We need to make another grocery run soon. But in the meantime, I want to make a simple batch of sugar cookies. I love a little grated orange rind in my dough. They are delicious.

I did variate with lime zest and also tried rosemary and lavender. Both are great, but you have to be subtle with one more so than the other.
Making monkey bread is something I miss doing because of the low carb diet. Perhaps a treat is in order.

Thanks for the suggestions. We all need a treat here and there. There is something special about a sugar cookie and a cup of tea for me.

Next time you go sugar cookies, try a drizzle made of reduced rum, lime (or lemon) juice, powdered sugar and lemon or lime zest.

Left over BBQ ribs with boiled gold potatoes.

Speaking of rum, the focus of tonight's dinner was molasses tinged winter melon soup. Rum is made from molasses. Winter melon is really a squash, aka Ash Gourd. I picked up a small one at the local produce store, about 11 lbs. Used about a 1/4, the rest is in the fridge. Tomorrow, I'll pickle it. Kind of like pickled watermelon, less sweet. Chicken broth, thick chunks of melon, pork meatballs, sausage, green onions, snap peas, apple slices and broccoli florets, a bit of soy sauce, steamed brown rice and all was well at the dinner table. Accompanied by bran muffins with lemon curd, cinnamon flavored black tea. Banana pudding for dessert.

Lox (smoked salmon) on onion bagel with thin sliced onion and Philadelphia cream cheese (1/3 less fat).

Mueller's Egg Noodles, tossed with cottage cheese, raisins, dried blueberries, chopped cling peaches that were jarred in white grape juice, pine nuts and unsalted cashews. Mugs of cinnamon tinged hot cocoa ala Hershey. Home made peanut butter oatmeal cookies for dessert with fresh sliced fruit. I reserved half of the jarred peaches and the grape juice for a banana pudding mix for tomorrow's dinner dessert of banana bread with the pudding in between two thin slices topped with fresh whipped cream.

Tomorrow's dinner is already on the stove, venison stew. An overnight slow cooked routine with fennel and peppers. New potatoes being added during the last hour. The venison is from young deer, extremely low fat, only good for stews and sausage, culled last week from the herds plaguing eastern Long Island. The deer are more prolific than rabbits, have no natural predators, and they have become not only a major nuisance to homeowners and farmers, but dangerous as they die from starvation and introduce disease to humans and other fauna. Most of the harvest goes to soup kitchens and public pantries. My cousin, who lives in Montauk, was one of the contractors hired to cull the herd by the county, and as partial payment retains part of the meat and the hides. He came by this morning with 10 lbs or so. 2 1/2 lbs went into the stew, the rest into the freezer until I have time to make sausages from it.

Ordered takeout at the Turkish restaurant by my house again- and I found out the owner is a neighbor of mine- a few streets away!

Lamb kebabs, fries, choban salad, tombik bread and lots of yogurt and red sauce. Black forest ice cream for dessert.

We are having Olive Garden tonight. I found a gift card we got at Christmas and never used. We both like their chicken gnocchi soup with spinach and their salad with breadsticks. So that is what I ordered. There was a substantial amount left on the gift card for a tip that I asked that they split among themselves. She was very appreciative.

Edit- While talking to the one that took my order told me they will be open for business in 2 weeks. That means all restaurants in my area! woooohoooooo
