What comes to your mind when you think of France?

You, I have to assume, have never tried good cognac.
I have. A very nice bottle gifted by an employee. I really, really tried but I couldn't do it.

I dont think there is a category of people that can be labelled "the French"...any more than there are any other broad categories of people like "The Americans" or "the white people" or "the black people". That being said...it was not uncommon when were were there a few years ago to be treated with initial disdain, even though 2 of the 6 of us spoke French and one of us understood French well enough to survive if necessary. BUT...if you were available for conversation, eventually...our experience was that people loosened up enough to talk and we found that most of the people we talked to werent that much different from us...with both the wants and wishes categories, universal distrust/disappointment of government, etc. I preferred the small towns and cafes to the larger touristy areas.

Paris is a disappointment. Or not, I guess...depending on your expectations. Culturally...I think France...or at least Paris...is a generation or maybe two away from being screwed. Many of the French are embracing, excusing, or at the very least, ignoring Muslim fundamentalism. When a young Muslim man dies in a stabbing in a mosque it is a national disgrace wit news and government rushing to report on and denounce the "islamophobic hatred!". When a spate of murders committed by Muslims occurs, they rush to proclaim "but its not all Muslims"......its only the extremists...and besides...look at what their lives are like.........

In that way...they are as ****ed as many Euro countries...and truth be told...we are probably are going to face much the same. I mean...they arent as screwed as England is...yet...but its coming.

My grandfather.

No it was 20 years ago. My boss drank cognac and he said it was very good.
I can understand that. I laid off cognac for a long time because what I had tried was common but not very good. For example, I use Courvosier VS or Remy VSOP for cooking. Without getting crazy you can pick up a bottle of Hine Rare for a reasonable price and it's very good at that price point. Delemain Pale and Dry will cost a bit more but if you try that and still don't like cognac you can stop. If you do like it then, sadly, life only gets more expensive from there.

Yes. The extra age makes a HUGE difference and it's a necessity with the spirits originating in the Grand Champagne and Petite Champagne regions.

Is Cognac trademarked like Champaign?

Steak Tartare. Not for the feint of heart!

I had it once in Paris. It was good but I don't know if I'd do it again.
Steak Tartare is the bomb!

As a child, I would only eat beef if it was suitable for resoling shoes. Didn’t like the taste of liquor either. I have grown onto the tastes I enjoy today. When we lived in Germany, my mother would take me on long walks which carried through lunch. She would often get the Steak Tartare and let me have the egg yoke to down. Another delicacy is a sushi Uni Shooter, usually garnished with a quail egg yoke…

Now that reminds me; isn't their food thingies so small in size? I'd say it has been a super long time since I have been to a French style food eating location, but for some reason I seem to remember that such little dishes of stuff were served.
I know of no quality restaurant that serves large portions. None, zero, zilch.

I doubt you and I eat at the same type places.
By the way, somebody wrote French fries; but is that really of French origin? Don't recall ever checking on that name. Guess one would assume it is from there, if the name is attached. But?
French fries are not French.

Also when I think of France I think about our shared history. Canada had French Kings prior to British monarchs.

Kings Francis I, Henry II, Francis II, Charles IX, Henry III, Louis XIII, and Louis XIV to be specific.
