Fresh herbs, lots of vegetables and seafood, and cooking techniques that use water or broth instead of oils—these are some of the standout qualities of Vietnamese food. “This cuisine, prepared the traditional way, relies less on frying and heavy coconut-based sauces for flavor and more on herbs, which makes it lower in calories,” Largeman-Roth explains.
Traditional Vietnamese flavorings (including cilantro, mint, Thai basil, star anise, and red chili) have long been used as alternative remedies for all sorts of ailments, and cilantro and anise have actually been shown to aid digestion and fight disease-causing inflammation.
One of the healthiest and most delicious Vietnamese dishes is pho (pronounced “fuh”), an aromatic, broth-based noodle soup full of antioxidant-packed spices.
Before they blow themselves off the face of the planet, I figured I would point out that they have one of the HEALTHIEST cuisines in the World.

Intresting, but why do you think the Vietnamese are going to "blow themselves off the planet?"

There is a Vietnamese place right by my apartment in Boston and it is one of my favorite places to eat, especially now that it is getting colder outside. Great food and at a decent price.

OPPPPs!!!!! :slapme:I didnt add that the last 2 Vietnamese dishes Ive had were soooooooooooo spicy that I was crying for 30 minutes. Its was also as good and it was spicy. I mentioned to my friend that Im surprised the whole area isnt in flames from the heat of many of their dishes.

Sorry about that! I was multi-tasking when posting this and not very effecitly I guess.

Ok thx.

Well I like spicy. Maybe I'll have to try Viet cuisine.

This morning I made a sliced-kielbasa-sausage with onions and Mexican serrano peppers, topped with ground red pepper. It lit me on fire, I spent five minutes under the sink flushing my mouth with water.

Yum.

Im actually going to try a Vietnamese hot dog inspired by this whole thread. Diced carrot soaked in rice wine vinegar and lime juice with a chili hot sauce chopped green onions and cilantro :)

vietnamese is a melding of french and chinese
for real spicy you might want to go thai

vietnamese lemongrass chicken (with curry - not included in the recipe below) may be my favorite food

Lemongrass Marinade
Ingredients:

3 fresh lemongrass stalks, chopped

2 tbsp. finely chopped green onion (include white)

1 tbsp. minced garlic

1 tsp. dried hot pepper flakes

1 tbsp. soy sauce

1 tbsp. sugar

4 1/2 tsp. fish sauce

1 1/2 tsp. kosher salt
Mix together and marinate 2-4 pounds of chicken. Marinate 4 hours or overnight. Grill or broil until done. You can also use a cut up chicken and roast it in a roasting pan.
