I was wondering what are people's favorite vegetarian recipes. This isn't necessarily for vegetarians or vegans only, I am a quite accomplished omnivore, but I do make it a point to have 3 - 4 meatless dinners. I can never go vegan because milk and cheese. The other day, I made this meal (Kung Pao Edamame):

It turned out really good. I've been finding that with some of these vegetarian meals, it's hit or miss. I've made some stuff that all the sriracha in the world couldn't fix.
What do y'all have for good veggie meals? I'm not super interested in dressing up vegetables as other things, like burgers or what have you. Veggies and grains are good in their own right and I feel that you can do a better job bringing out their deliciousness if you treat them like the vegetables they are instead of trying to masquerade them as something else.
Still, those sorts of things can turn out good, so post your fav veggie meals here.
