Whats on your Thanksgiving menu?

We had a good gathering. I smoked beef ribs, turkey breasts, and salmon. Smoked mac n cheese, root hash, greens...lots of greens, pies, several baked appetizers...good food...good gathering. We are blessed.

gotta ask, what is root hash?
 
roasted potatoes, sweet potatoes, yams, turnips, parsnips, and onions in butter and herbs.
thanks for the explanation. this is a dish with which i am unfamiliar. now beef hash, something that may be unique to upstate south carolina, is a great country food. i was wondering if it was the same item in your neck of the woods but named differently
after your post, they are clearly two very different items
 
This is one I will try with leftover turkey, though a rotisserie chicken or 4 grilled chicken breasts would work as well.

Chicken Enchilada Soup
• 1 quart chicken broth​
• 2 (15-ounce) cans mild green enchilada sauce​
• 2 (4-ounce) cans diced green chiles, drained​
• 2 cups shredded chicken​
• 1 cup water​
• 1 Tbsp cumin​
• 1 Tbsp chili powder​
• 1 tsp onion powder​
• 1 tsp garlic powder​
• 2/3 cup corn, thawed if previously frozen​
• 2/3 cup instant rice​
• 1 (8-ounce) package cream cheese, cubed​
• S&P​
Add the broth, enchilada sauce, green chiles, water, and chicken to a slow cooker.​
Cook on high heat for 30 minutes.
Add seasonings and reduce to low. Cook an additional hour.​
Add the corn, rice, and cream cheese. Cook stirring for 10 minutes.​
Season to taste.​

Use the low-sodium broth or homemade. Salt can get away from you on this sort of recipe. I am wondering how a can of creamed corn would work. To tone down the heat, rinse the green chilies when draining.
