What did you have for dinner? -Part dois

Another "breakfast for dinner!" New chorizo, egg, and green chili casserole.

So far, so good. But it doesnt look like the picture (altho I did alter the recipe a bit) and working with Mexican chorizo is messy, so greasy. I'm more used to cooking with Spanish chorizo...a very different animal.

I knew this going in. I skimmed as much fat (saturated fat) as I could from the chorizo but the meat breaks down completely. You know how ground beef clumps and browns? This doesnt...it just loosens and cooks. Releasing a ton of (saturated) fat. But so tasty!

But the chorizo is completely incorporated into the egg mixture, not separate like the peppers and onions. (The chorizo should be distinct pieces and the egg casserole should be yellow, not...salmon pink. :D)

It's very tasty and was supposed to be pretty healthy except for the chorizo. I thought I'd be able to separate out more of the fat. As it is, I'm afraid it's a heart attack in a casserole dish! :D Used minimal cheese except for topping and milk instead of cream. Lots of healthy peppers. Requires some "tweaking" for next time :)

I make my own chorizo with impossible burger. It is much leaner and it keeps its shape.

Have you ever tried using pepperoni instead of? I make it occasionally and it has beau coup flavor too.
 
I make my own chorizo with impossible burger. It is much leaner and it keeps its shape.

I'd have to find some recipes...it seems pretty intense.

I've already decided to make my own breakfast sausage tho...way simpler than I realized.

Edit: Look at these ingredients! Yum! And I have everything but the ground pork. Looks amazing.

Mexican Chorizo Ingredients
Ground Pork.
Paprika.
Cayenne.
Ancho Powder.
Guajillo Powder.
Garlic Powder.
Cumin.
Oregano.
Coriander.
Mexican Cinnamon.
Ground Clove.
Red Wine Vinegar.

Have you ever tried using pepperoni instead of? I make it occasionally and it has beau coup flavor too.

I love pepperoni. It would be good in casseroles but it would also release a lot of that same orange grease (yum ;) but trying to avoid).

I might try it tho.
 
I'd have to find some recipes...it seems pretty intense.

I am thinking that store bought chorizo is mushy because of its exposure to the vinegar over a period of time.
Freshly made should give you better results.
Btw, I use apple cider vinegar.

Pizza and Philly Cheese steak, order delivery for the Ball game.
 
I had my big meal at noon today: beef stew, tossed salad, stuffed celery and a mandarin.

Tonight I'll probably have Lipton onion soup, some crackers and a banana. At least, that's the plan.
 
Tex-Mex meatloaf with salsa, queso, and roasted veggies. My wife did most of the prep. I didn't expect that salsa and queso would enhance the meatloaf that much.

Of course! It's like a great TACO pie. I used to do the same thing but Italian. Also excellent.
