What did you have for dinner? -Part dois

Roast pork with crispy crackling and gravy, mashed potatoes (small serving) with extra gravy, accompanied by a Chinese style vegetable stir fry (Bok Choy, Onion, Carrot, Bell Pepper in a sticky Chinese sauce). Weird combo, but put the roast on without thinking about the veges. Then when I opened the fridge to check the veges I was - "what am I going to do with that lot?". Suddenly the Bok Choy took over and I went all Chinese. Was yummy.

Quick menu tip for those who don't normally eat Bok Choy. Try peeling off some leaves, baste them in a little sweet chilli sauce, then wilt the basted leaves in the microwave. Pretty yummy. Bok Choy has become one of my go to leafy greens since a friend first showed me that trick.
 
Cleaned out the fridge. Ritz, Club and Finn Crisp crackers, cheeses, chicken salad, egg salad, vegetable cream cheese, black and kalamata olives, chicken and ham slices. Banana pudding.
 
The farmer's markets are in full swing and the garden is about to produce, so I am shutting down the indoor garden sans a few herbs that are doing well.
I made a Bok Choi, chick pea and rice stir fry.
Rice and beans once again. 🤷‍♀️
 
I made a dish comprised of fresh green beans added to sauteed onions, and tomato paste to which I added some chopped smoked ham, seasoned with a shaker blend of Italian seasoning, and salt and freshly ground pepper. A side dish of bird's nest pasta with browned butter and a smattering of Parmigiano Reggiano.

Sounds interesting. I’ll have to try it.
 
My wife made meatloaf, roasted green beans, and cornbread "muffin tops." They're basically like flat cornbread muffins.
