What did you have for dinner? -Part dois

Chinese Pork buns, peas and an apple. There's a Chinese brasserie that is a Michelin star winner at the mall near my place. There was an anniversary sale of $1 for a box of 6 so I stood in line for two hours to grab a few boxes. The outside is sort of like baked rice, slightly crunchy, like a dim sum. The inside is a savory pork filling with a sweet and sour sauce.

INGREDIENTS:

FOR THE BAKED COCONUT SHRIMP:

Nonstick cooking spray
1/3 cup shredded unsweetened coconut
1/3 cup panko breadcrumbs
1/4 cup whole wheat or all-purpose flour
2 eggs
1 pound 16-20 count peeled and deveined shrimp
FOR THE CREAMY SWEET CHILI SAUCE:

Juice of 1/2 lime
1/2 cup low fat mayonnaise
1/4 cup Asian sweet chili sauce
2 teaspoons sriracha

Hey! Who you calling a jackbutt? There's nothing wrong with taking pics of your food, I do it all the time. :mad:

I guess I'm just old. I've been all over the world and the first picture I ever took outside the US was this year in Colombia. And that was because I was at a brand new hostel and wanted to help my gracious hosts, the owners, with some photos of their place on TripAdvisor.

But I still didn't photograph my food... I figure if there's a picture of whatever dish I'm eating, someone else has already taken a better picture and put it online than I could ever take with my Alacatel WalMart phone. :)
 
Food is one of the most difficult things to photograph properly. Lighting is critical, and lighting in most situations is abysmal. Hence, most people's food photos are unflattering, if not downright horrendous.

I modified a recipe I found online, so here's what I did (was a large batch, we had leftovers)...

- 2 lbs hamburger
- 1 large onion, diced
- 1 small can diced green chilis, drained
- 1/2 large can red enchilada sauce
- salsa (guessed how much)
- 1 can cream of mushroom soup (sounds out-of-place, but it helps)
- 1 can corn, drained

Cooked hamburger to almost done, drained, then added all that in except the onion and cooked until hot.

- 1 large can refried beans

Had the refried beans warming in a separate pan because it's easier to work with when warm.

- shredded cheese (I used sharp cheddar, but whatever kind you like)
- 1 bag tortilla chips

Poured a little bit of enchilada sauce on the bottem of a 13x9 pan. Spread refried beans on bottom of pan. Add layer of shredded cheese on top of refried beans. Add raw onion and most of the chips to the beef mixture then spread that over the cheese and beans. Take remaining chips and put on top and/or along sides. Layer more shredded cheese on top of all that.

Bake at 375 degrees for 30 minutes.

Let set for 5 to 7 minutes prior to serving.

This reminded me of another easy recipe.

-Browned Ground beef
-Can of Rotel diced chilis and tomatoes
-Melted Velveeta cheese
-Bowtie pasta

It's simple and it's very much like homemade Hamburger Helper, but it's nice.
 
Last night: 30ish day dry-aged prime NY Strip Steaks. Rare for the wife, rare+ for me.

w/ Muga (an unfiltered reserva rioja)





Tonight: I'll probably bake lamb chops with a garlic-rosemary glaze and some other spices. Not sure about the veggies until I check the fridge to see what we have.
 
Ham sandwich, gazpacho with peas and a banana before 7pm.

Later on that evening, my son is is asleep and my best bud calls up. He is not happy since his GF's mom has showed up and he wants to leave the house for awhile. So we end up at a gastropub drinking beer, bourbon and munching on onion rings. We make it back to his place at dawn and his GF's mother is gone. GF cooks us a batch of pasta alfredo with chicken before I head back to my house. What a night lol.

Mixed salted nuts, two apples, and an experimental mixture of spices, yogurt, and veggie mix (corn, peas, carrots, etc). The latter worked out rather better than anticipate.



I was being quite lazy, and am still in shock after last night.

GF's family recipe Chinese chicken salad (sliced chicken breast cooked in soy sauce and drained, cole slaw mix, sliced almonds, sunflower seeds, green onions, ramen noodles, tbsp vinegar, oil, and tbsp sugar)

Sriracha chile wrapped egg roll

it's a pretty good recipe.
