What did you have for dinner? -Part dois

Yum Neau beef, (cold grilled sliced beef tossed with roasted chili pepper, cilantro, red onion, cucumber, tomato, green onion, and lime juice), 3 stars and red curry with chicken over rice, 4 stars.

This cold beef salad was better than Crying Tiger, which had fewer vegs and was a little too heavy with lime.
 
Had friends over for dinner- made enchiladas with ground beef and chiahuahua cheese filling, smothered in mild red chile sauce.

It was a hit, because luckily my better half restrained my preference to increase the chile heat.

Will have leftovers tomorrow, and I’ll add some hotter chile sauce.
 
A bit ago we had frozen battered shrimp, easy and tasty, but expensive, $4.95 for 9 oz of shrimp and quite a lot of batter, delicious but still just flour and egg. So I bought some frozen shrimp and I'm making my own batter and saving money. I got to wondering just how much I was saving and looked it up. So tonight a humbled cook is serving very expensive home made battered fried shrimp. ,,,,,,,,,,,,,, it better be good.
Meh! A lot of work and quite a mess.........going back to the frozen already battered and ready for the fryer. Chalk it up to miss advised ventures in cooking
 
Went to a local smokehouse with my son, DIL and kids. My son wanted to check it out as he is having a bunch of buddies up to the lake and rather than cook he thought he would get them to cater. Really , really good. We had the meat platter which included brisket, ribs, pulled pork and smoke sausage. Sides of potato salad, slaw and pickled red onions. As I said very good, will definitely go again....except it's a bit far away so maybe pick up when in town.
 
Had to return an Amazon article to the Whole Foods drop off. While at the deli counter getting proscuiutto to go with a honeydew they had on sale, I noticed they had a" one entre + two sides" deal that looked big enough to serve two. So tonight we are having sweet chili glazed salmon, broccoli crunch salad and tortellini with tomatoes, some other veggie and feta cheese. Fresh strawberries and cream for desert. If I get ambitious I might make short cakes for the strawberries.

BBQ chicken, Mac and cheese, corn on the cob, broccoli salad and for dessert a combination of strawberries, raspberries and blueberries with a generous dollop of whipped cream and cream cheese
 
Leftover enchiladas on the rooftop, since it’s 80 degrees. The extra red chile made the enchiladas hotter than that, though. Got to sample my neighbors homemade peach pie for dessert.
That sounds really ideal.

What's with those tempting pies laterly? Yesterday we had Key Lime at @Parrish's house, today this.
Who knows, tomorrow someone will tempt me with strawberry/rhubarb.

Mine was just a frozen Marie Calendar's pie, it's the least sweet of all the other flavors but pretty good for a frozen dessert. Unfortunately, the crust gets wider and the filling gets less and less everty time I buy one. I throw out most of the crust, it's not that good or that healthy.

Years ago we used to get very good frozen Key Lime Pie at Safeway when visiting in Florida. It was a no name brand in a plastic pie box. Key Lime seems to be the pie most adaptable to freezing.

The frozen ones I've had from Safeway and Kroger are not good at all. Trader joe's had one that was better but not great. Years ago we had a Fresh Fish Company restaurant nearby that had excellent Key Lime pie, we always took a whole one home with us. Of course, the restaurant closed many years ago.
