What did you have for dinner? -Part dois

Last night we had Salmon Croquettes. Simple, easy.

2 Cans Salmon
2 Eggs
1/4 onion, finely chopped
1 tsp Pepper
1/2 back Club Crackers
1/2 bag Saltines

Mix it all together, make small patties, fry'em golden

Serve with Baby Green Lima Beans, frozen ones not the canned **** and Mac and Cheese. Old Fashioned southern eats.

Ingredients

Servings 4 Units US

5 eggs, lightly beaten
1⁄8 teaspoon black pepper
1⁄2 teaspoon salt
1 cup fresh bean sprout
1⁄4 cup green onion, finely chopped
1⁄4 cup sliced celery
1⁄4 cup slivered yellow onion
1 teaspoon soy sauce
1⁄4 teaspoon cornstarch
1 teaspoon sesame oil
1 cup cooked pork or 1 cup cooked ham or 1 cup cooked chicken or 1 cup cooked shrimp, chopped
8 slices soft white bread (such as Wonder)
cooking oil
4 pieces iceberg lettuce
4 -8 slices ripe tomatoes
4 dill pickle slices
1⁄4 cup mayonnaise

Directions

In a small bowl, whisk together eggs, salt, and pepper.
Whisk together the soy sauce with cornstarch in a small bowl or cup.
Heat a small amount of oil in a skillet and add vegetables, and saute over medium heat until they cook through. Set them aside to cool.
When cool, add the cooked vegetables, soy sauce with cornstarch, sesame oil, and main ingredient of choice (pork, ham, etc.)to the beaten eggs, stirring to mix well.
Heat a small amount of oil in a skillet and when hot pour in about 1/2 cup of the foo yung mixture.
When the underside browns, flip the patty and brown the other side.
Serve patty on soft white bread with lettuce, tomato, pickle, and mayo.
 


Sigh. Tuna sandwich and salad.

My doctor says I have a fatty liver (even though my cholesterol, blood pressure and heart rate is normal) and so wants me to stop drinking too.
 
tacos carnitas - easy to make and everyone likes it

Cut a pork shoulder roast into large (1") chunks and put in a pot with a lot (sorry I don't measure) of oregano, cumin, coriander, a bit of cinnamon, an orange cut in half, an onion cut in half, a lot of chopped garlic, two bay leaves and a tbls soy sauce.

Put in enough water to leave an inch or so of the meat over the water line (the meat will shrink once it gets cooking and sink below) and bring to a boil and then reduce to a simmer uncovered.

Simmer until the meat is fork tender (should take appox 2 hours) and remove meat and set aside. Break the meat up into smaller pieces (whatever size you like in your tacos)

Pull out the orange and the carrot and the bay leaves and reduce the liquid until it's a thick glaze and pour it over the meat and toss to coat evenly.

Heat a little oil in a pan over a high flame and throw the meat in and crisp it up. Put in warm corn tortillas with your favorite toppings (ex cilantro, guacamole, cheese, onions, salsa, etc)

1 lbs Live Mussels
1 bunch of asparagus

Boiled the Crawfish, stripped the meat made Etouffe! Yes, there are mushrooms in there.
Steam the Mussels in a butter garlic white wine sauce.
Baked the asparagus with olive oil, garlic salt, pepper, onion powder then coated with Parmesan Cheese and crisped.

Mesquite grilled Akaushi NY Strip Steaks. I marinated them in a steak marinade that I just love. Along with lime beans, green frozen and fresh corn on the cob. Mmm Mmm good.
 
Last night I cooked Jamaican Jerk Chicken on the barbie. I marinated it for 2 days. With it I cooked Jamaican Rice and Peas which is actually rice and kidney beans. For that I fried 4 piece of bacon in a dutch oven on the grill side burner. I saved about a tablespoon full of grease and crushed up the bacon and left in the pot. To that I added a puree of shallots, ginger and garlic, kidney beans, coconut milk and rice. Yea, mon.

I know it's hot but tonight I'm having homemade Brunswick stew. I love it.
 
For dinner I had plain boiled rice and a Thai dish made of carrots, broccoli, bell peppers, onions, tofu, and peanuts in a coconut sauce. Is this authentic Thai cookery?
 

I used the marinade from this recipe for the injection sauce.Except I used 1/4 teaspoon of ground oregano instead of half a teaspoon of oregano and instead of Chipotle chile powder I used a tablespoon of Frank's Redhot. I also use this for beer can chicken.Brick chicken is faster than roasting it in the oven,but not as moist as the beer can chicken.

Did you use curry? I like Thai food.
 
Yes, curry was used. But most of the vegetables are not native to Thailand.

All of those vegetables can be found in Thailand and are commonly used.

The real question is "Did the curry sauce have lemongrass in it?"

Hotdog pockets/pasties. Basically I took the Rhodes frozen self rising dinner rolls,flattened them a little,added a cooked hot dog, half a slice of American cheese and little bit of chili. It was pretty good,although next time I will use Rhodes Texas size rolls.
 
Managed to talk my notoriously picky mother into trying Middle Eastern food, and even a hooka, this afternoon. The place was a bit lame, IMO (between the busty, barely clothed look of the hostess, the overly-gaudy decorum, loud music, and the abundance of deserted tables, I get the definite impression that the place was probably a late night divebar/dance club first and a restaurant only second), so I'll try and talk her into trying some place a bit more authentic in the future. She got a kick out of it all the same, however. lol

I got an earache which makes it painful when I chew food- made the healthy salad, chicken biryani and fresh fruit I was eating into a painful torture fest. Ugh.

 
Having it for dinner tomorrow, actually. Company coming. I always do what I can the day before, so I can have fun too

Shish-kabobs. Bought filet mignons and had the butcher cube them. Veggies include large mushrooms, zucchini, grape tomatoes, purple onions, red and yellow peppers. Marinated in a slightly sweet combo of EVOO, lemon juice, A1 Steak Sauce, garlic powder, pepper, soy sauce, and a little bit of Kikoman Teriyaki Sauce.

The baking potatoes are in the oven...having doubled bakeds with sour cream, sharp cheddar, butter and finely chopped green onions. Butter in the mix and then, tomorrow, when I heat them through for 45 minutes, butter on top.

Lastly, a fruit salad with strawberries, can't elope, honeydew and pineapple. Bite-sized pieces mixed with a half-can of apple pie filling. That's all made, too.

Before dinner, Tom's sister-in-law is bringing seviche from their favorite restaurant, also having a small sampling of Italian and Greek olives, and, finally, Merkt's Sharp Cheddar and Rye Triscuits.

oh, Tom's sister is bringing her famous baked cherry pie for dessert.

We may burst.
