Lol... yeah, that's wild, I've seen this before.
Not sure if they're good eating or not... unlikely, given that they're carp. They'd make good fertilizer though.
They're not bottom feeder carp. They're filter feeders. I cooked some fish nuggets off a large one at a fish fry, and everyone who sampled it, liked it. Snow white, flaky meat.
The problem is as stated in the video. The fillets are ridden with y bones. I got around that by throwing out all the fillet except the top couple inches. Since the fish I started with weighed about 40 pounds, I still ended up with a couple pounds of fish nuggets once the part I kept was chunked up.
