Springerle are German anise-flavored cookies that go back at least 700 years in their rich tradition as special gifts during the holidays and other celebrations. Delicately crispy-crunchy and a slightly chewy center, they’re made with simple ingredients and are easy to make but absolutely require that you follow some key steps to achieving the right look, texture and flavor. This authentic Springerle recipe goes back to the Swabia region of Germany where these famous cookies originated.

I love anise cookies. This is a cookie that ices itself.

2 1/4 cups flour, well sifted (280 gr)
1/2 tsp baking powder (2.5 ml)
1-2 Pinch salt
4 eggs
2 cups sugar (400 gm)
1 1/2 tsp anise extract (8 ml)

Sift flour, baking powder and salt together several times. Don't omit this step. The dry ingredients need to be very loose.

Beat eggs at low speed until frothy.
Turn mixer to medium and slowly gradually beat in sugar.
Fold in dry ingredients slowly.
Beat for 15 minutes, then blend in anise.
Using small cookie scoop or teaspoon drop onto greased cookie sheets, working quickly.
Allow to stand in a cool place several hours or over night. A dry crust will form atop of the cookie.
Bake at 325° (168°C) about 14 minutes, should not brown.


This is a very white cookie. If desired, add 2 pods of finely ground star anise to the dry ingredients and reduce extract to 1 tsp (5 ml). It enhances the flavor, but damages the look.

That was my breakfast this morning:

A cup of coffee - and a Springerle dipped into it.
A delicious combination!

And also practical.
Because the Springerle are stone hard now - and need to be softened.

Btw: Once upon a time those Springerle were enjoyed all year round on special days.
In the beginning they were not Christmas cookies only.
