Pouring and Dipping Sauces

Many sauces are both, of course. Ketchup is spread onto meat and used to dip fries. BarBQ sauce is poured over meat and used to dip hot wings.

This mayo-based sauce is often used with BarBQ.

Alabama White Sauce
1 cup mayonnaise
¼ cup apple cider vinegar
1 Tbsp mustard
1 Tbsp brown sugar
2 tsp prepared horseradish
1 tsp lemon juice
1 tsp Worcestershire sauce
½ tsp garlic powder
½ tsp onion powder
cayenne pepper to taste
S&P to taste

Use whole-grain or stone-ground mustard. The horseradish is a fundamental flavor but the rest is to taste.

Substitute a can of tomato paste for the mayo and drop the mustard. This becomes a nice ketchup.

This sounds really good! Aside from Sweet Baby Ray's BBQ sause, I'm more inclined to sauses that aren't tomato based, I'll bet this would be awesome on catfish!

Sure. Up the lemon a bit.

For fish tacos, use chipotle pepper instead of cayenne.

In USA, tomato paste, vinegar, and onion powder has been the commercial recipe for 100 years.

Most palates don't know any better.

Lol , tomato sauce needs to cook all day. Mixed continually. This is why it is generally made on Sunday.

LOL! Italians and Sicilians all over the world are having panic attacks! A good pot of "gravy" (tomato sauce) is an all day affair...calling ketchup tomato sauce is blasphemy!

In Japan they use ketchup in spaghetti sauce.

It started after WWII when the US soldiers stationed in Japan introduced Italian cuisine. Japanese chefs wanted to recreate it, but tomato sauce was hard to find. So they substituted ketchup and it kind of stuck with the locals.

Ingredients​

  • 12 to 13 ounces kielbasa or other smoked sausage
  • 1 medium green bell pepper
  • 1/2 medium yellow onion
  • 3 cloves garlic
  • 2 tablespoons unsalted butter, divided
  • 1/4 cup plus 1 tablespoon ketchup, divided
  • 2 tablespoons oyster sauce
  • 1 teaspoon hot sauce, such as Tabasco
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 pound dried spaghetti
  • Shaved Parmesan cheese, for garnish

I used to babysit a family from Sweden. They wanted me to bake them elbow macaroni and then pour ketchup on it.
 
In Australia they call ketchup, tomato sauce.
Not sure what version of ketchup they have in Australia, but in my experience (and a bit of internet searching) in the US, ketchup is a sweet/sour sauce. And technically, not just made from tomatoes.
But there are plenty of sauces based on tomatoes that are savory, so I think a distinction needs to be made.
Perhaps in Australia they have other names for the savory varieties.

Edit: It certainly wouldn't do to put ketchup on pasta.

Lol, i figured if i called it gravy no one would know what i am talking about.

Every Sunday, when i was a kid. They we got several meals each week from it.
No meat balls, no sausage.
Just the pork bones used to flavor the sauce.

My father-in law was an off the boat Sicillian, he would cuss you like a dog if you called it "spagetti sauce" But when he made a pot of gravy, it was loaded with sausages, ribs, meatballs and other greasy meats. Delicious!

We were not as well healed. 😥

When i got older and family had more money we would ocationally have braciole with the pasta and gravy.
 

I've actually become a fan of that. weird. I'm generally a ketchup freak. But do not eat it on hotdogs or, god forbid, macaroni. And mayo on french fries is surprisingly good. Same with cheesesteaks.
 
Mayo with a dash of ketchup mixed in is a good all-around sauce for stuff like chicken. Ditto with a little yellow mustard and mayo for fish sticks.

I also use Thai sweet chili sauce for stuff like jalapeno cheese sticks, otherwise just have bottled ranch or bleu cheese for buffalo wings.

I don't "get" the obsession with Ranch. But Thai sweet chili sauce is the bomb.

I recently tried mayo, actually an aioli, on Belgian fries at the local farmer's market.

Agreed.

Whenever I go camping, the only condiments I take are Tabasco and ranch dressing.

It's all I need.
