I don't know what the marketing department was thinking. We have an assortment of highway diners out here. We call 'em truck stops. Love's, Pilot, Flying J, Sierra Sid's, Boomtown, others across the state. Glorified gas stations (most), but that's the culture out west. There are no roadside diners in Nevada. Opening a roadside diner on the edge of downtown, as the company did here, makes the restaurant just another themed venue in a sea of world-themed restaurants.
We don't like grits and greens. Pretty basic knowledge any marketing student could have figured out.

Around here, to find locally owned (non franchised) and operated establishments you need to get away from the interstates and thoroughfares. Best restaurant Yankee Pot Roast I've enjoyed was served in a Mom and Pop Mexican Restaurant on Old Laredo Highway in San Antonio.
We have a ton of pizza, Mexican and Chinese places along with pubs and the like. Some chains but plenty of local joints. Tulcingos for tex mex type food is spot on.
