Mashed Potato Sandwich??? (1 Viewer)

Ages ago, I was served what was a mashed potato sandwich that has some pieces of shredded chicken mixed with it. I know it definitely has some mayonnaisse mixed in.
I still think of that sandwich to this day.

Recently, by fluke.....I made what was supposed to be Cuban Picadillo (without the green olives, cumin and cinnamon) which I served over rice.
I diced more potatoes than what the recipe called for....but I used them up anyway. So the dish was loaded with diced potatoes. I added soya sauce and a generous amount of lemon juice (which are not listed in the recipe)....I thought it would be great as contrast to the raisins.
I also used finely chopped sweet red pepper (sauteed along with the onions and garlic).

I had some leftover picadillo which I used as sandwich filling using soft hamburger buns (ala-sloppy Joe).
The potatoes had soaked up the flavor of the picadillo....the taste was amazing!

So one of these days, I'll be tweaking that picadillo recipe and use it as a base for a different kind of
mashed potato sandwich filling.

Mashed potatoes, shredded steak, and a bit of sour cream and yellow mustard. (mustard optional) :rock

Anyone has his own recipe for a mashed potato sandwich to share?

A bit different than your own experience:

Form cold mashed potatoes into bread like rectangles, evenly thin (1/4" at most). Fry at medium heat in olive oil, canola oil or even butter as you prefer, until crisp on the outside and golden colored. Drain on paper towels to absorb excess oil.

Either form into a sandwich with fillings of choice and serve, or place on a baking sheet with fillings and or just cheese of choice, bake until cheese melts and serve as open sandwiches or covered. Or back in the same pan, covered at low heat until cheese melts. Be careful not to burn. Feel free to turn if closed. And feel free to flavor the mashed potatoes with whatever ingredients you choose, spices, herbs, chopped peppers, vegetables like spinach, zucchini, onions, garlic, whatever.

A local Cuban restaurant serves this as Patata Cubano, with typical Cuban Sandwich fillings. When I enjoy these at one of their few tables (it's really a takeout place for Chinese Cubano), I bring baby wipe packets. Very effective at getting the excess oil off my hands and fingers. I refuse to share these with the grandkids. Their greasy little hands are already all over everything. They don't need greasier hands.

There's an Indian sandwich that I have not made before, but I have made parts of before and it was good. It's pretty unhealthy, however.

I made a copy cat of that nice mashed potatoes-chicken sandwich filling:


1 large chicken breast
4 medium red potatoes (peeled and quartered)
1 tetra pack chicken broth
1 tbsp chicken soup powder
2 onions, finely chopped
2 - 3 garlic cloves, crushed or finely chopped
butter or canola oil
Real Mayonaisse
green onions, chopped finely (optional)
black pepper


1. Bring to boil, and simmer chicken and potatoes, and the soup powder until chicken is done. Set chicken aside, and continue simmering the potatoes.
While the potatoes are simmering, slice the chicken breast into smaller pieces, and shred the meat apart.
Set aside.

2. Take out the potatoes and mash them. Set aside.

3. In a non-stick pan, saute' the onions and garlic in butter or canola until onions are transparent and soft.
Add the mashed potatoes and shredded chicken, and stir to mix. Add a little of the broth, and mix it well.
Keep stirring, adding a little of the broth....until the mixture looks "gummy" or "pasty."
Season it to your taste. Remove from heat.

Let it cool. Depending on how much you like mayonaisse, add some to the mixture.
I also added the green onions.

I've had this for fillings using regular white bread, and also croissant. I ate it for several days!!!

Note: Portion this and freeze some (if you're not eating it within 5 days - because of the Mayonaisse).
You can thaw it later and heat it up........and just add mayonaisse when it cooled.

1. Dice/mince leftover roasted meat
2. Heat it in a skillet with butter, splash in Lea & Perrins Worcestershire sauce
3. Toss the heated meat into leftover mashed potatoes
4. Form patties
5. Heat the patties in a buttered skillet
6. Put together a cheese sandwich and put the potato patty inside
7. Brown the sandwich in a buttered skillet or on a grill

Does that count?

I won't lie. I love comfort food. It's the main reason I workout and run everyday....can't eat food like that and not be very active so the body will burn off the calories and fat....Well, I guess one can, but one'll become a dickey-do dude...not good for one's sex life, or self-confidence for that matter.

lmao...wow, this put an old memory in my mind. Not a mashed potato sandwich, but you know those frozen hash brown patties? I used to nuke those, and make a sandwich out of them, with BBQ sauce when I was a kid...easy after school snack that I used to love...but cringe at the thought of now.

lol...well, give 'er a try, I seem to remember it was about a minute and a half per side for the pattie in the microwave...hehe... But be warned, is Carbageddon... lolz

I've eaten "Tater Tots." Are the hash brown patties all that different? To be sure, neither is refined dining, per se, but they're tasty enough.


At the end of the day, if there is a food I liked well enough to eat at some point in my past, I probably still like it, even though I may not eat it as often as I once may have.
