Ages ago, I was served what was a mashed potato sandwich that has some pieces of shredded chicken mixed with it. I know it definitely has some mayonnaisse mixed in.
I still think of that sandwich to this day.
Recently, by fluke.....I made what was supposed to be Cuban Picadillo (without the green olives, cumin and cinnamon) which I served over rice.
I diced more potatoes than what the recipe called for....but I used them up anyway. So the dish was loaded with diced potatoes. I added soya sauce and a generous amount of lemon juice (which are not listed in the recipe)....I thought it would be great as contrast to the raisins.
I also used finely chopped sweet red pepper (sauteed along with the onions and garlic).
I had some leftover picadillo which I used as sandwich filling using soft hamburger buns (ala-sloppy Joe).
The potatoes had soaked up the flavor of the picadillo....the taste was amazing!
So one of these days, I'll be tweaking that picadillo recipe and use it as a base for a different kind of
mashed potato sandwich filling.
Anyone has his own recipe for a mashed potato sandwich to share?
