Lamb and Mutton

Judith bought a leg of lamb for Easter dinner.

She also bought three jars of apple jelly and a bag of finger potatoes.

Sounds good. What's mutton got to do with it? From my second-hand experience mutton needs handling that pays off but is time consuming.
 
Some years ago a dear friend from Barbados asked me why our lamb tastes more like veal than mutton. Somehow she organized a source and yum, that was the best food I had in a long time. If you have to eat sheep, go for the adult. A little goes a long way.
 
I prefer lamb over mutton.
Lamb chops with a balsamic vinegar and fig sauce is excellent.
And whenever my son visits he asks me to make Lamb Tiki Masala over Cilantro rice
 
Here is a tip from the land of lamb (New Zealand). Mint sauce. Mint sauce is the most classic and fantastic condiment to go with lamb or mutton. I personally like a mutton roast as the premium 'lamb' dish, but even here they can be hard to find. Most everything that is in the supermarket is from younger sheep. I eat about as much lamb as I do beef these days. Anyway, when eating any normal lamb dish other than a shepherds pie or something middle eastern etc, keep the mint sauce handy.
 
There is also hogget, which is intermediate between lamb and mutton. Produced by slaughtering sheep between 1 and 2 years of age.

But hogget and mutton are almost impossible to find, outside of a few specialty butchers. Not enough market for either in the United States.
 
I like an occasional lamb chop, or a lamb stew. Do Not Care for mutton at all....um um
