Most of the Central Americans in the US are not Caucasians but are mixed race mestizos, mixed with both Amerindian and European and sometimes African. So they are not Caucasians as you claim.
No Mestizo is not a race, it's a mix of races. That stated, Mestizo is an accurate racial label over "Hispanic" which tells you nothing about a persons racial heritage.
Answering "I'm Hispanic" tells us nothing about your ancestors because:
A 100% African person, a 100% Chinese person can be "Hispanic". Hispanic is not a race. It is a culture just as Christianity is a religion. Hispanic does not really tell us anything about you other than you perhaps eat tacos, which obviously isn't very telling about you.

A tell tale sign of someone who is purely caucasian is a narrow face, narrow nose.
A flat broad nose and round face would indicate that somewhere along the line interracial mating took place. Thinner lips are also Caucasion - any physicalities that where benefecial in extreme cold climates & high altitudes.

America has more Mestizos than African Americans now yet one would never know this through American media. You will never hear the word Mestizo in the US. Ever. This is even more odd when you start to realize that A 2012 study published by the Journal of Human Genetics found that the majority of the current Mexican population (~93%) is mixed race to some degree, counting the Mexican population of the US.
Why is this? Why do we constantly read about black and white America in our media but never mestizo America?
Is this intentional? Is this cultural? Is this sociocultural conspiracy? The media? Is this lack of care about said Mestizo population compared to the black, white populations? Is this simply that Mestizos are thrown into a black, white categorization based on their skin color and that's why? Do Americans just not focus on Mestizos enough to care to even acknowledge their existence? Is it simply that Mestizos haven't built up the clout yet of black America?
I find this "erasing" of Mestizos from all facets of American conscious fascinating either way. I mean really, you never hear "A Mestizo man, a black man and a white man were arrested today." Why not?
