It's creamy/fluffy - has pineapple and sometimes nuts in it. It's like desert type things - maybe made with whipped cream or so. I use to eat it, actually - and when I did it was green.

Ring any bells?

This is the one I thought of:

PISTACHIO DESSERT SALAD

1 lb. can crushed pineapple and juice
1 pkg. pistachio instant pudding
1 med. Cool Whip
1 c. miniature marshmallows
1 c. chopped nuts

Stir dry ingredients into pineapple and juice. Mix in other ingredients. Pour into mold and chill. Can be used either for light dessert or a salad. Serves 10.

Dang! I'd forgotten about this dessert. It's pretty darned good. And great for summertime. Thanks!

We call it Ambrosia.

Obviously you can add or omit ingredients and quantity to suit your tastes.

Adding a little of the cherry juice makes it pink. I assume the pistachio pudding in MaggieD's recipe makes it green.

1 (8 ounce) container frozen whipped topping, thawed
2 1/2 cups shredded coconut
1/2 cup chopped walnuts
1 (8 ounce) can pineapple chunks, drained
3 cups miniature marshmallows
1 (10 ounce) jar maraschino cherries, drained
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
