What did you have for dinner? -Part dois

Yesterday and today, Mexican food, shredded beef burritos smothered with guac and sour cream. Chips and salsa, today I made a small plate of cheese nachos. Breyer's Natural Vanilla for dessert.

My wife didn't even ask me why the waffles were blue. It's true that time really does diminish excitement within a marriage.

That, and she's as 'always online' as I am, and knew exactly what I was doing.
 
Chinese take out ...the worlds best...and leftovers for two nights running, so three nights of Chinese...I'm good for a while. Back at the lake and it is cool and sunny. Fall moving to winter so comfort food is in order. Chicken with southern style dumplings, up north of the 49th I call that chicken and sliders.

We are on a count down to FL so for the next few weeks it will be POOF....pulled out of freezer/ fridge...as I run supplies down. POOF meals are always fun and they challenge you to be creative not wasteful.
 
Lunch: my home made Bobby Flay tex-mex pumpkin soup with extra chipotle adobo.

Later, since I eat dinner late, will have some high quality low-fat cottage cheese..."Good" brand. The regular fat is also good but since I top-dress with good quality olive oil to increase my daily intake, it works out well and tastes great. Also add lots of black pepper and chives.

(Dinner will be the unstuffed cabbage roll leftovers. Put a bunch in the freezer as well.)
 
I do my big monthly shopping at the beginning of the month and I have so many yummy options right now, I still haven't quite decided. I had avocado stuffed with cottage cheese and chives, fresh tomatoes, rice cakes and fresh mandarins for lunch. Maybe soup and crackers, definitely banana and dates in yogurt w/honey drizzle.
 
Wasn’t up for doing dinner tonight so we went to our favorite Italian restaurant. Wife had a pear salad with a maple balsamic vinaigrette. I had eggplant parm with spaghetti and a meatball. Side salad with chunky blue cheese dressing. A Blue Moon to wash it down. I boxed half of my eggplant parm for the freezer.
 
Tonight will be yummy baked potatoes. With crumbled bacon, shredded cheese, butter, a touch of garlic, and guacamole.
So good!
A guy back in the day in Killeen, TX had a restaurant serving loaded baked potatoes. The smoked brisket (the best is made in TX) tater was to die for.
 
@Callen, are you talking about pastry strips? Some call them slick dumplings. Chicken Pastry is one of my favorites, and my family, too. It's an eastern NC thing, like vinegar -based barbecue. Great-granny Parrish fixed the best. My pastry never turned out like hers. When I discovered Ann's Pastry Strips produced 10 miles from her home, the taste was identical. In the summer she added fresh corn. Heav-en. When it's done, I add a can of summer-crisp corn and serve. If you see them at the market, it's on the frozen aisle by biscuits. The recipe is on the box. if you have leftovers, I add extra chicken broth to cut the white-gravy -like consistency. You won't be disappointed
