Yup, it is time for one of the big, soft salty pretzels that leave you feeling like you ate a bellyful of lead. But, oh they are so good, with a beer, or a favorite mustard cheese dip, or some bratwurst, or all three.

I've always disliked pretzels and since I started having to control my salt intake, eating pretzels is simply out of the question.
The insidious pretzel lobby started this.
There are salt free pretzels. And you can make your own, flavored with ginger, garlic, herbs, whatever you might like.
Now, unless you are particularly salt sensitive, meaning your doctor just didn't say "your blood pressure is up, cut the salt," recent studies show cardiac issues are far more likely among those with insufficient salt intake than those with excess salt intake. On the other hand, salt helps you retain fluids. If you have an arrhythmia problem, retaining fluids is not what you want. However, edema, which can be caused by circulatory or kidney problems may have nothing to do with salt intake, or it may caused by circulatory, arrhythmia or kidney malfunctions. No one really knows if the chicken came first.

German cuisine is the marriage of potato, onion, and bacon, as well as tube shaped smoked meats. In other words, it boils life down to the only things that matter, and elevates them to a level all other nations only WISH they could achieve. Why do you think fancy food was invented in the first place? To outdo German cuisine. Which has never, ever happened. Plus, they invented beer. Yes they did. Everything before were only failed attempts.

I am under doctor's orders that limit me to 2000 mg's of salt daily, however, I am advised to shoot for 1500 mg's daily to have a bit of leeway. This is a result of congestive heart failure. Retaining fluids is what got me into this shape.
One of my favorite sites tells me that one small soft pretzel is 870 mg. That's over half my daily allowance. A medium or large would blow it for the day.

Potatoes are a new world food. Fancy food in the west was invented by the Austro Hungarian Empire, and that include most so-called French haute cuisine dishes. The ancient Egyptians drank beer. There's evidence of neolithic beer parties, prehistoric Oktoberfests.
Best seafood and fish dishes I ever enjoyed were at Suerken's, a lower Manhattan German oyster bar, seafood and fish restaurant on Reade St. I am among the many former patrons still in mourning of its closure. Bay scallops poached in melted butter with a touch of sweet paprika, divine with a chewable bock beer on tap, or two.

BTW, you forgot to mention sauerbraten, schnitzel, spaetzle, Knödel, venison or wild boar slow roasted with juniper berries, sauerkraut, pumpernickel, Kutzelberry juice, Rieslings, Sachertorte with Schlag and other goodies.
