You will note that the words 'Church and State' can be reversed with out losing their meaning IMO.

...and now we put the quote into context and point out that what Jefferson was discussing was the gov't's intervention into the church.

Take the time read BOTH letters and it becomes crystal clear that the interpretation that's commonly applied is almost completely opposite what Jefferson saying.

Property ownership is a choice. Lots of very wealthy people live their entire lives in high rise apartments. Actions have consequences and if you don't like the consequences of a particular action, don't take that action.

The poor simply could not pay such a tax because they have no money! They're poor! That's a foolish example.

No, it is an example designed specifically to show the folly of claiming that tax structure doesn't matter, which is what you suggested when you asked what difference it made.
