Ages ago, I was served what was a mashed potato sandwich that has some pieces of shredded chicken mixed with it. I know it definitely has some mayonnaisse mixed in.
I still think of that sandwich to this day.
Recently, by fluke.....I made a Cuban Picadillo (without the green olives) which I served over rice.
I diced more potatoes than what the recipe called for....but I used them up anyway. So the dish was loaded with diced potatoes. I had some leftover picadillo which I used as sandwich filling using soft hamburger buns (ala-sloppy Joe).
The potatoes had soaked up the flavor of the picadillo....the taste was amazing!
So one of these days, I'll be tweaking that picadillo recipe and use it as a base for a different kind of mashed potato sandwich filling.

Make fried mash potato balls with pimento and load them into a warm hoagie with American cheese, bacon and hot sauce.

I also used finely chopped sweet red pepper (sauteed along with the onions and garlic).

I've put leftover mashed potatoes and diced leftover meat from a roast, and sometimes ground sausage inside of grilled cheese sandwiches.
Does that count?
- Dice/mince leftover roasted meat
- Heat it in a skillet with butter, splash in Lea & Perrins Worcestershire sauce
- Toss the heated meat into leftover mashed potatoes
- Form patties
- Heat the patties in a buttered skillet
- Put together a cheese sandwich and put the potato patty inside
- Brown the sandwich in a buttered skillet or on a grill

My restaurant was comfort food but this was not on the menu.
I won't lie. I love comfort food. It's the main reason I workout and run everyday....can't eat food like that and not be very active so the body will burn off the calories and fat....Well, I guess one can, but one'll become a dickey-do dude...not good for one's sex life, or self-confidence for that matter.

lmao...wow, this put an old memory in my mind. Not a mashed potato sandwich, but you know those frozen hash brown patties? I used to nuke those, and make a sandwich out of them, with BBQ sauce when I was a kid...easy after school snack that I used to love...but cringe at the thought of now.

lol...well, give 'er a try, I seem to remember it was about a minute and a half per side for the pattie in the microwave...hehe... But be warned, is Carbageddon... lolz
I've eaten "Tater Tots." Are the hash brown patties all that different? To be sure, neither is refined dining, per se, but they're tasty enough.
At the end of the day, if there is a food I liked well enough to eat at some point in my past, I probably still like it, even though I may not eat it as often as I once may have.
