Kobe Beef....Is it ever worth it?

I was in san jose for about nine months years ago, I found the people there to be very snooty.

Amazon is in Seattle which one might think would be a problem but tech people on the West Coast tend to share a certain stink.

Cover your ears of course, we are not supposed to be talking like this.

Because I raise Kobe beef in my backyard. I learnt it from all the Eastern training I had.

You do know that America is in big trouble and that we dont have a second to waste...right?

America is indeed in big trouble for as long as Trump is in power. Maybe Trump needs to eat more Kobe beef?

Sure it is or there would not be such a clamor for/about it.

It's about tribe identity not food value or food excellence.

No different than the smartphone you use or the logo on your polo shirt.

The brand on your sneaker or the car that you drive.

LOL

maybe they just had customs you were not familiar with so you became uncomfortable and labeled them in a way that made you feel better?

In your favor Angus means pretty much nothing, but Americans think that it does.

Actually it seemed very one upmanship to me. I've never seen so many mercedes, lexus, audi and other expensive cars in one area. I can deal with girls gone wild, but one upmanship gone wild is not for me. Maybe I'm wrong but it seemed like many people were basically showing, look what I have.

You just proved I was right.

FYI, be secure in your tribe and the "colors" of other tribes will simply be differences to you and not lead to you being so defensive, insecure in your tribe.

I voiced my opinion, you are welcome to call it being defensive, it doesn't change my opinion. I didn't say it was a fact.

Was at a place the other day for a 12 course tasting menu....the meat course is offing Kobe from the best Japanese farm we get told, UPCHARGE is $20/ounce.

It was very popular, Chef says that it always is.

WHAT SAY YOU?

EDIT: The Amazon people buy it this I know, but that does not mean that it is a good idea/purchase.

For $20, I'd try it. That said, you can get American Wagyu for a lot less. A really good, marbled, aged Prime hits the spot, too.

Just trying to point out what generated your reaction.

I have nothing against you or your tribe.

peace out

The Amazon people eat water buffalo.

I have to say no for myself.
I think a prime rib eye, sous vided to medium rare, and then finished on a searing grill, is hard to beat,
and a lot less expensive.

Meh, 9 times out of 10 labels like that are an excuse to upcharge stupidly. I just cooked me a really nice Rib eye for breakfast, bet you it was better than that chef's steak.

I'm jaded against steak in restaurants at this point.

I have only had it once, in a Geisha house in Kyoto. It was very expensive and yes, it was worth it. But let me warn you, it is very, very rich. I likened it to what I imagine whale blubber is like, very fatty.

My problem is that I once ate really old cow that was injected with 33% salt water and then frozen as steaks then sold door to door (this is all my wifes fault, honestly) and yes it shrank like a mother****er but it sure was tender and tasty.

I love Foie Gras so I dont anticipate a problem.

Did you really have to go and disappoint me yet again?

Disappointing the Failed Intelligentsia is my middle name. :2razz:

You used to lie better!

Then too the last time I was into Red Lobster they had this humongous lobster in the tank, about $130 I was told....my first thought was "I am not so sure that there is anyone in the kitchen to trust with my $130 lobster".

Just think, a century or so ago in New England, they would serve lobsters to prison inmates. The lobster population was so vast that local fishermen considered them a nuisance catch. Lobstermen were paid a bounty to clear the local waters of lobsters to make way for other species more valued as food. 8-10lb lobsters were common, often ground up for animal feed and fertilizer, the shells ground and added to construction concrete or bricks, not to mention land fill.

I can envision you massaging a bull all day.

I left nothing out...$135 for the tasting menu, upgrade the meat course for $20/ounce. I did not have it, I had some gourmet poultry from Vashion Island..Guinea Hen...done Sous Vide . My daughter and her wife spent $1,000 for two last year, I was not willing to do that but I wonder what I missed.

You left out the $135 tasting menu, buddy. Hence the confusion. $20 upcharge for genuine Japanese Kobe Wagyu a steal if your chef friend is really good. The difference between Kobe and Wagyu is slight. I love American Wagyu myself. That Ribeye is good eats. It makes its own gravy. :) Definitely last meal worthy, done right.

There a place called the Ribeye in Napavine WA. They make a smoked ribeye with a pecan butter. Delicious. They know how to cook a steak.

This was a super high quality place....stop assuming. Yes we still have a year to go on the bankruptcy but I am not exactly suffering, something that drives my haters nuts.

I am a retired chef who spent the night at Chef's table gabbing with Chef as I watched this Kobe being sliced cooked and served.

This is Truth

I am sure it was a high quality place. I am sure the chef told you it was genuine Kobe beef. I am almost sure that the chef believed it was Kobe beef.

However, only eight restaurants in the US serve Kobe beef that has been certified Kobe by Kobe Beef Association, and none of them are in your area. Unless you ate at one of those restaurants, I am certain it was not Kobe beef

Here are the eight certified Kobe beef restaurants in America:

1. 212 Steakhouse Restaurant, New York, NY

2. Alexander's Steakhouse-Cupertino, Cupertino, CA

3. Alexander's Steakhouse-San Francisco Restaurant, San Francisco, CA

4. SLS Las Vegas - Bazaar Meat by José Andrés Restaurant, Las Vegas, NV

5. Jean Georges Steakhouse, Aria Resort and Casino, Las Vegas, NV

6. Nick & Sam's Restaurant, Dallas, TX

7. Wynn Las Vegas – SW Steakhouse Restaurant, Las Vegas, NV

8. Teppanyaki Ginza Onodera, Honolulu, HI
