1. Trinidad Roti. Note: there's a difference between India Roti and Trinidad Roti. In the post black slavery era, Indians were basically tricked into moving halfway across the planet to work the sugar cane feilds of the Caribbeans blacks had recently been emancipated of. They brought with with their native Indian recipes including Roti. New spices and other ingredients were added and others not available were subtracted plus somewhat of a freeze framing of the way they did it in the late 1800s occurred that might be comparable to American Italian food compared to Italy Italian food. In my humble the Caribbean version is far better.
