how do creationists deal with this?

I don't think forty days and forty nights is completely literal. But I don't think my salvation relies on knowing exact times. We can argue of the time of the creation and many other things, but in the end my salvation will not rely on it.

I thought that 40 days/nights was a reference to the time Jesus spent in the woods being tempted by Satan.
 
Actually, the Catholic Church has officially stated that evolution does not necessarily conflict with the beliefs of Christianity. [1]

I commend their willingness of compromise with current scientific theories, even if they include their own speculation about Intelligent Design in every detail. The Church defers to science for the age of the Earth and, I suspect, the age of the human race. I realize most Christians in the US are either Protestant or another denomination, but the Catholic Church has historically been biggest authority on Christian doctrine. If they can publicly accept science, maybe someday the Mennonites will too.
