I always have more time to cook for myself in the summer. What are some of your favorite healthy recipes for breakfast, lunch, dinner or even snacks?
in a pan, fry a pound of bacon
while waiting for it to complete, peel a pound or so of potatoes
slice potatoes into thin rounds
remove crispy bacon from the pan and place the potatoes in the hot bacon grease
stir periodically until the taters edges begin to turn a light brown
remove potatoes to a plate lined with paper towels
add salt liberally
place bacon - now in pieces - on top of cooked potatoes
enjoy
discard your bathroom scales

you should add leeks or onions to that.

I like raw Jicama as a healthy snack. It tastes like a pear with some hints of apple. I don't have a healthy breakfast I can recommend other than boring yogurt with granola or banana w/unbuttered whole wheat toast. When I eat breakfast, it is either sausage and pancakes or bacon and eggs on toast most days. For dinner, I can eat a salad or a sandwich and be fine on most days. I eat throughout the day so dinner is not a requirement.
Jicama is also great with a little lemon or lime juice. And for an extra burst of flavor, add some Tajin spice.
I have not tried it yet, but I am told that you can make french fries out of it. I add it to soups as a base sometimes but cannot state that it adds anything noticeable in the way of flavor to them. It is more a texture addition than a flavor one.
The French fry thing sounds interesting, they do handle similar to a potato. Though they taste nothing like a potato. I love sweet potato fries though, and Jicama has a mild sweet flavor. I'm betting they'd be good.

I pretty much half everything or it's too much. Also used lime juice rather than taking the time to zest a lime.
Mango Smoothie
· 1 1/2 cups (360ml) freshly squeezed orange juice
· 1/2 cup (120ml) water, plus more as needed
· 1/2 medium avocado, pitted and peeled
· 1/2 teaspoon finely grated lime zest
· 1/8 teaspoon ground cardamom
· 2 cups (320g) frozen mango
· 1/2 cup (62g) ice cubes
Throw all of the ingredients into your blender and blast on high for 30 to 60 seconds, until smooth and creamy. Add more water as needed to blend.
Boosters: 1/2 teaspoon wheatgrass powder; 1 teaspoon chia seeds; 1 teaspoon flaxseed oil
