But as for you, take wheat, barley, beans, lentils, millet, and spelt, and put them in one vessel and make them into bread for yourself; you shall eat it according to the number of the days that you lie on your side, 390 days.

Ezekiel is a prophet. He is told to collect grains and lentils, including some considered animal feed. This is beggar food, and he is to subsist on 8-10 oz per day, along with 24 oz of water. These are near-starvation levels of food, yet it is a balanced diet.

There are two approaches. A commercial supplier sprouts all of the grains and lentils.



This variety has no oil, yeast, sweetener, or flour (it is vegan). The sprouts are pat-dried and chopped into a meal. Add water and knead into cakes and toast. Sprouting breaks down starches and produces enzymes that promote digestion.

The other approach is to take the same dry ingredients and mill them into a flour, and make bread as usual. Either way, you get a dense, whole-grain, vegan bread with added protein.




 
I like it because it reminds me of what a good loaf of pumpernickel tastes like.
