That's far too few calories per day. While he may very well be eating the salad each day, I suspect that's not the only thing he is eating each day. The article didn't discuss the rest of his diet, aside from it not including alcohol. But losing 60 lbs. in just a couple months is significant and very fast (likely, too fast), so he certainly might have been consuming very low calories in those initial months. I wonder if he had any energy at all, even though he said he felt better?
