Celebrate National Garlic Day with Mary's Roasted Garlic Spread

Spread on toast or crackers for a delicious treat.
Ingredients
1 head garlic (try elephant garlic)
Instructions
Preheat the oven to 300 degrees F.
Remove the loose, papery, outer skin from the garlic. Put the whole head, root-end down, in a shallow baking dish. Roast for 1 to 1¼ hours or until the garlic is soft. Cool until it is easy to handle.
Squeeze the soft garlic out of the skin.
Variation: Mix the roasted garlic with 3 cups cooked white beans. Process in a blender or food processor until smooth. Add ¼ teaspoon crushed red pepper flakes for a spicier spread.

That's gonna need a little salt, even if it's pink Himalayan. ;) Sounds good though.

Hey, a post I can get behind!

Spread the garlic on a slice of crusty toasted bread, dribble with a little olive oil, and as country boy said, perhaps a dusting of salt. Add a glass of red, and you're set! :thumbs:

I used to have a restaurant near me that placed roasted garlic & bread on the table au gratis, as they sat their guests.
