Has anyone cooked bulgur wheat? How do you cook it and know anything about the glycemic index compared to white refined rice?

It depends on the type of Bulgur wheat. The average glycemic index for it is 47 verses white rices 73.

You basically boil it just like rice, and the length of time depends on the type of bulgur wheat.

You can also just soak bulgur wheat for a while, instead of cooking it. There are some wonderful tabouli recipes you can look up

I tend to cover it slightly and boil away until the water has just evaporated/absorbed. That tends to make it come oit nice and fluffy.

It soaks up sauces/gravy a treat and is perfect for the runnier sauces that often get left behind on the plate.
